Quick Easy Chicken Hot Pot Recipe

Quick and easy Chicken Stew Recipe for warming the kitchen on a cold night. This is a lot like a chicken hot pot and chosen from my "quick, easy chicken recipes".

It's always a hit served with rice if you want to. The recipe has potatoes in it but you can make it go further if you serve it with rice or warm buttered bread.

Chicken Stew Recipe Ingredients

  • 6 chicken breast or thigh portions
  • salt and freshly ground pepper
  • 30ml oil
  • 2 large onions, finely chopped
  • 1 clove garlic, chopped
  • 1 stick celery, finely chopped
  • 250g mushrooms, sliced
  • 87g white onion soup powder (1 packet)
  • 3ml paprika
  • 5ml dried mixed herbs
  • 125ml water
  • 250g carrots, peeled and cut into strips
  • 200g potatoes, peeled and cut into wedges
  • 125ml apple juice

How to make this Chicken Stew

Season the chicken pieces with the salt and pepper.

Heat the butter and brown the chicken pieces on both sides and set aside.

Saute the onion, garlic and celery and mushrooms until soft.

Add the soup powder, paprika and mixed herbs and stir well.

Add the water and simmer for a few minutes

Add the carrots, browned chicken pieces and potatoes

Mix in the apple juice and stir well.

Simmer for 20 minutes more or until the vegetables are soft and a thick sauce has formed.
