Classic Italian Chicken Recipes


A famous Italian Chicken Recipe. This Chicken Cacciatore Recipe is made with lots of tomatoes and mushrooms cooked in wine sauce and flavored with herbs. Delicious served with pasta or rice and a simple salad (with no tomatoes though).It makes a rich sauce that is superb to mop up with Italian bread.

Chicken Cacciatore Recipe Ingredients


  • 1 large chicken, portioned
  • 15ml olive oil
  • 2 large onions, peeled and sliced
  • 250 g mushrooms
  • 700g firm red tomatoes
  • 2 large cloves of garlic, Peeled and crushed
  • 30ml tomato puree
  • 20mls fresh rosemary leaves, bruised and chopped
  • 1 bay leaf
  • 300ml dry white wine
  • 15ml balsamic vinegar
  • salt and pepper

How To cook Italian Chicken Cacciatore


Season chicken with salt and pepper.

Preheat oil in a casserole dish and brown chicken well on both sides. Do it in two batches to avoid over-crowding in the pan. Set the chicken pieces aside.

In same dish, cook onions and mushrooms until soft and brown around the edges. Add the garlic and fry for a further minute.

Skin tomatoes and chop into small pieces and add with puree, rosemary, bay leaf, white wine and vinegar to the pan. Add seasoning and bring to boil, let it bubble and reduce, without covering, to half its original volume. This will take about 20 minutes.

Add brown chicken, replace lid of casserole and simmer gently for 40 minutes.

Enjoy your Chicken Cacciatore with bread, pasta or rice.
