Perfect meal for a summer lunch, Spicey Chicken Salad is quick and easy to make and it goes a long way if you serve it with crispy rolls. The recipe says chicken breast cubes but you can easily use left-over chicken from any part of a cooked chicken.
Using the non-fat / fat-free yogurt is a good alternative for the usual mayonaise so commonly used in chicken salad recipes. Combine lemon juice, garlic, Thyme, salt, pepper and cayennepepper. Beat in the yogurt. Gently fold in the chicken, onions, green pepper and celery. Refridgerate for 30 minutes so the flavours can combine. Just before serving, fold in the tomatoes.
