Try This Simple Chicken Salad With A Delicious Salad Dressing

Perfect meal for a summer lunch, Spicey Chicken Salad is quick and easy to make and it goes a long way if you serve it with crispy rolls. The recipe says chicken breast cubes but you can easily use left-over chicken from any part of a cooked chicken.

Using the non-fat / fat-free yogurt is a good alternative for the usual mayonaise so commonly used in chicken salad recipes. If you need to feed a lot of people then consider serving it over cold pasta or rice. So it's still a salad but a bit more substantial. The cayenne pepper is what gives it the spice factor and you might want to adjust the amount according to how much spicey you prefer. Serves 5.

Spicey Chicken Salad Ingredients

  • 1 1/2 Tbls. lemon juice
  • 2 cloves garlic, minced
  • 1/2 tsp. dried thyme
  • 1/4 tsp. salt
  • 1/4 tsp. pepper
  • 1/8 tsp. cayenne pepper
  • 1/2 cup non-fat plain yogurt
  • 3 cups cubed, cooked chicken breast
  • 1 cup thinly sliced green onions
  • 1/2 cup diced green bell pepper
  • 1/2 cup diced celery
  • 2 diced fresh tomatoes

How To Make Spicy Chicken Salad

Combine lemon juice, garlic, Thyme, salt, pepper and cayennepepper. Beat in the yogurt. Gently fold in the chicken, onions, green pepper and celery. Refridgerate for 30 minutes so the flavours can combine. Just before serving, fold in the tomatoes.
