Mandarin Chicken Salad Recipe Ingredients:

  • 1 tablespoon olive oil
  • 2 boneless, skinless chicken breast halves
  • 5 cups romaine lettuce
  • 2 cups mixed greens
  • 1/2 cup shredded or chopped carrots
  • 1 tablespoons toasted, salted sesame seeds
  • 1 cups canned mandarin oranges,drained
  • 1/2 cup shredded red cabbage
  • 1/2 cup crispy (chow mein) noodles (optional)
  • 1/2 cup roasted sliced almonds (optional)

Oriental Salad Dressing Recipe Ingredients:

  • 2 tablespoons mayonnaise
  • 1 1/2 tablespoons rice vinegar
  • 2 teaspoons brown sugar
  • 1 1/2 teaspoons sesame oil
  • 1 1/2 teaspoons soy sauce
  • pinch of garlic powder
  • salt and pepper to season

How to Make Mandarin Chicken Salad

The Oriental Salad Dressing needs to be made first so it can chill before serving. Place the salad dressing ingredients in a mixing bowl and blend with an electric mixer until combined. Place in the refrigerator to chill.

Heat the olive oil in a frying pan. Fry the chicken breasts on both sides until no longer pink and cooked through. Be careful not to over cook the chicken breasts or they will be tough. Once the chicken is cooked, set aside to cool and then cut into bite-size pieces or tear into strips.

Place the chicken breast pieces and other salad ingredients in a bowl and give it a bit of a toss to combine.

Toss the salad with the chilled oriental salad dressing and serve.
