What is Pesto Sauce?


Pesto is a thick, uncooked Italian sauce typically served on pastas, grilled meats and poultry. Traditional ingredients are basil, garlic, olive oil, pine nuts and parmesan cheese. These are ground into a paste with a pestle and mortar and moistened with the olive oil. Pesto can also be prepared in a food processor.

Basil Pesto

Place 250ml fresh basil, 50g pine nuts, 2 roughly chopped garlic cloves and salt to taste in a food processor. With the motor running, add enough extra virgin olive oil to form a soft paste, about 200ml. Stir in 50ml freshly grated Parmesan and check the seasoning.

Parsley Pesto

Place 250ml flat-leaf parsley, 50ml roughly chopped walnuts and 15ml freshly grated lemon zest in a food processor. With the motor running, add enough extra virgin olive oil to form a soft paste, about 200ml. For added flavour, macerate the walnuts overnight in 80ml white wine.

Sun Dried Tomatoes Pesto

Take 100g sundried tomatoes preserved in oil, drain the oil and reserve. Chop the tomatoes roughly and place in a food processor together with 1 garlic clove, 20ml fresh thyme, 4 capers and 30ml peconno cheese. With the motor running, slowly add the reserved oil to form a soft paste. If the oil is insufficient, supplement with olive oil.

Coriander Pesto

Place 250ml fresh coriander, 10ml grated ginger, 1 garlic clove, 1 chopped lemongrass stalk, freshly squeezed juice of 1 lime, 6 drops of toasted sesame oil and salt to taste in a food processor. Pulse briefly to form a soft paste.

Three Nut Pesto

Lightly toast 50 each of walnuts, almonds and hazelnuts. Place in a food processor together with 50g grated Parmasan, 50ml flat-leaf parsley and salt to taste. With the motor running, add about 100ml canola oil to form a soft paste
